Shojin Ryori is the traditonal Japanese vegetarian meal that prohibits meat and develops vegetarian diet, along with the preparation of dishes using seasonings and plant oils a substitute food for meat.  

Shojin Ryori or ascetic cuisine is born of a union between man and mountain: carefully prepared with traditional techniques and ingredients from Dewa Sanzan's rich natural bounty, it is purifying fare that expresses gratitude to nature.
